From a variation on the Dolcetto vinification method, the "Bollicine... from Dolcetto grapes" are born. During the harvest we pick the bunches in the coolest areas, selecting those at the beginning of maturation.

WINEMAKING

Direct pressing of the grapes. The first fermentation takes place in steel tanks at a temperature of 15-18°C for 10 days. The second fermentation takes place in the bottle at a temperature of about 14°C. Refinement is in the bottle for 12 months on its lees.

ORGANOLEPTIC CHARACTERISTICS

On tasting, the wine presents a golden yellow colour, rapid mousse, fine and persistent perlage. The aromas are of bread crust, yeast and dried fruit, with some floral notes. In the mouth it is full and rich, pleasant to drink with a refreshing final sensation. The LETIZIA sparkling wine is perfect as an aperitif, but it also accompanies very well a meal based on white meat and fish. Excellent in combination with dessert.
